Crossroads Culinary Center (C3)
Crossroads Culinary Center, commonly known as C3, is a large residential dining hall at the University at Buffalo's North Campus. Located in the Ellicott Complex, C3 serves as the primary dining facility for the Ellicott residential quads, the nearby Greiner Hall, and anyone else who wishes to dine there. It opened in 2012 after a major renovation of the aging Red Jacket Dining Hall, transforming the 1970s-era cafeteria into a modern, award-winning dining center. The facility is operated by UB's Campus Dining & Shops and is known for its food court concept and variety of food options.
History and Renovation
[edit | edit source]By the late 2000s, the original Red Jacket Quad dining hall in Ellicott had become outdated after nearly 40 years of service. In 2010, UB pursued a $12 million project to overhaul and expand the facility as part of the UB 2020 strategic plan. Construction began in May 2010 and added a 13,000 square foot extension along with 24,000 square feet of renovations to the existing hall. The revamped dining center, rebranded Crossroads Culinary Center (C3), opened on October 25th, 2012. UB hailed C3's opening as ushering in "a new era of dining" at UB and noted it was one of several state of the art, LEED-designed projects completed on campus around that time. C3 was built with numerous eco-friendly features and earned LEED Silver certification for sustainable design. Notably, the renovation replaced all old infrastructure and interior finishes and introduced a glass-walled entry lobby, a fireside lounge, and updated food-service equipment.[1]
When it opened, C3 was among the most modern collegiate dining halls in the region and immediately gained recognition. It won the National Association of College & University Food Services' Loyal E. Horton Gold Award in the category of Residential Dining Concepts, a prestigious honor in campus dining.[2] The renovation also increased the facility's capacity, as C3 can seat over 650 customers at a time and serves more than 2,000 students per day during peak semesters. The upgrade allowed UB to handle a growing on-campus population and enhanced students' residential experience, according to university officials.[1]
Design and Features
[edit | edit source]C3's design follows a marche-style concept, emphasizing fresh food prepared to order at multiple specialized stations in an open marketplace layout. Instead of the traditional cafeteria line, the dining center features eight distinct food stations, each with its own kitchen and serving area visible to patrons. These stations include Oreganos (Italian pasta), Blue Dragon (Asian wok cuisine), Global Noodle (pho and rotating international soups or bowls), Seasons (salad bar), Strictly Vegetarian (meatless and vegan entrees), Baked Creations (fresh pizzas and baked sandwiches), Carve (rotisserie and grilled meats), Foundations 1846 (comfort foods), and Temptations (desserts). Each station offers a menu that changes daily, providing a wide variety of options - recipes are prepared in small batches with many ingredients sourced locally as part of UB's sustainability initiatives.[2]
The dining hall's interior is divided into multiple seating areas rather than one large hall. Architectural elements, lighting, furniture, and decor differ around each station to give students a different feeling for each location. A two-sided fireplace lounge sits at the center, providing a cozy social area for students to gather and study. C3 was designed by Kideney Architects to echo the bold geometric forms of the surrounding Ellicott Complex, while introducing contemporary materials and glass to invite natural light.[3]
In terms of operations, Crossroads Culinary Center is open to all students (and even the public) and functions on the university meal plan system, including continuous service on weekends. It is staffed by professional chefs and UB dining personnel. The facility's modernization included improvements in waste management and energy efficiency consistent with its LEED Silver Status.[1]
Reception and Student Experience
[edit | edit source]Upon its debut, C3 was praised for vastly improving campus dining quality. UB Campus Dining and Shops touted it as award winning dining that put UB "at the forefront of the collegiate dining experience."[1] The extensive menu choices - ranging from custom pasta and stir-fries to vegetarian specials and international cuisine - not to mention their fish fry, pizza, and soup - have made C3 a popular dining destination for students. A student reviewer in The Spectrum campus newspaper described C3 as "a favorite food spot for many meal-plan-holders and campus visitors," and noted the value of its all-you-can-eat buffet for just one meal swipe.[4]
However, student opinions have noted some downsides. During the initial weeks of each semester, C3 often showcases its best offerings to welcome students, but some have claimed that the menu can become repetitive or "back to their old days" later in the term.[5] Lines can be long during peak hours for the most popular foods due to their popularity, and seating - while ample - sometimes fills up, especially when the dining hall staff closes the upper platform in the back of the dining hall, and students can sometimes find difficulty in finding a clean table when patrons don't wipe off their mess after they're done eating. Overall, however, C3 is regarded as the flagship dining hall at UB.
